Stuffed Eggplant with Potatoes and Tomatoes / Bharay Bangun Aloo aur Tamater kay Saath

Ingredient:
  • 1 large size           Eggplant
  • 1 Medium size     Potatoes (cut in thin slices)   
  • 4 Medium            Tomatoes (cut 1 in thin slices &chop the rest)             
  • 1\2 tsp                  Red chili powder            
  • 1\2 tsp                  Salt
  • 1\4 tsp                  Turmeric powder
  • 1 tsp                     Coriander powder
  • 1/tsp                     Cumin (Zeera) powder

  
Steps:
  1. Cut eggplant in half.we will be using one half of the eggplant in this recipe.
  2. Make parallel cuts in the eggplant. make sure to cut just enough to fill with the stuffing.
  3. Mix all the spices together. apply half of the spices in the cuts we just made.(keep the rest of the spices for the tomato puree)
  4. Now, stuff slices of tomatoes and potatoes in these layer.
  5. In a saucepan, add oil, spices and add chopped tomatoes.
  6. Cook for 3 min on medium heat, then carefully place the eggplant.
  7. Cover the saucepan and cook the eggplant for 8 to 10 min on medium to low heat
  8. Remove the lid and cook for a few minutes on medium to high heat to evaporate the excess water of the tomato.
