Stuffed Eggplant with Potatoes and Tomatoes / Bharay Bangun Aloo aur Tamater kay Saath
Ingredient:
- 1 large size Eggplant
- 1 Medium size Potatoes (cut in thin slices)
- 4 Medium Tomatoes (cut 1 in thin slices &chop the rest)
- 1\2 tsp Red chili powder
- 1\2 tsp Salt
- 1\4 tsp Turmeric powder
- 1 tsp Coriander powder
- 1/tsp Cumin (Zeera) powder

Steps:
- Cut eggplant in half.we will be using one half of the eggplant in this recipe.
- Make parallel cuts in the eggplant. make sure to cut just enough to fill with the stuffing.
- Mix all the spices together. apply half of the spices in the cuts we just made.(keep the rest of the spices for the tomato puree)
- Now, stuff slices of tomatoes and potatoes in these layer.
- In a saucepan, add oil, spices and add chopped tomatoes.
- Cook for 3 min on medium heat, then carefully place the eggplant.
- Cover the saucepan and cook the eggplant for 8 to 10 min on medium to low heat
- Remove the lid and cook for a few minutes on medium to high heat to evaporate the excess water of the tomato.
